Sneak Peek: Six of One Coffee Roasters

Offering 25 ways to enjoy a brew – from black (espressos and ristrettos) to semi-black (macchiatos) to white (flat whites) as well as filter and iced options – this place takes its coffee seriously – even if you don’t.

Opening on Tuesday (16 November), Six of One is a new coffee roaster focusing on specialty coffee from fresh, high quality coffee beans sourced internationally from small lot farms.

The “roastery door” at the Mills Precinct allows customers to see the full coffee experience – from chatting to the Head Roaster as he preps the green beans all the way through to a well-trained barista serving a cup of the good stuff. Offering 25 ways to enjoy a brew – from black (espressos and ristrettos) to semi-black (macchiatos) to white (flat whites) as well as filter and iced options – this place takes its coffee seriously. Even if you don’t.

Customers can choose from the eight current blends and single origin options, or leave it to the barista as to what beans work best for your order. There are also adventurous options, such as the ice maple brew (cold brew + milk + maple syrup), dry cappuccino (espresso with almost no milk) and London Fog (earl grey tea + hot milk + vanilla). Addicts can opt for the Barista’s Breakfast: an espresso, a white coffee and a batch brew all served together.

As well as the coffee to enjoy there or takeaway, you can also purchase coffee brewing equipment and beans to (ground to your preferred machine’s specifications), and the knowledgable staff can give you the instructions you need to perfect your home brew.

Six of One founders Jason and Lucy are the parents of the six children – their inspiration behind the Six of One name. After juggling life between Brisbane and Portland, Oregon, the couple have chosen to focus on local, settling down in Toowoomba while drawing inspiration from Portland’s outdoor lifestyle, coffee roasteries and micro-breweries. There’s plans for events, collaborations and more, so stay tuned.

Six of One will be open from 6.30am – 2.00pm every weekday and is located at The Mills Precinct, 279 Ruthven Street.
